After catching up on sous vide techniques via numerous nights binge-watching YouTube videos, I think I have my skills locked in.I've stuck with mostly thinker cuts of meats, typically minimum of 1 1/2 inches thick, which seems to work perfectly. New York strips, ribeyes, porkchops, etc. have all turned out perfectly wonderful.As for the unit, does exactly what it says it will do. The app is nice for monitoring, in the unit itself runs quietly enough that you can barely tell it's on. -- Probably the best part: it can be used without your cell phone. It's a completely standalone unit, so if you don't feel like walking around staring at your phone all night, you can run everything from the unit itself. Some other brands require the cell phone app, which would be a nightmare if you're either busy on your phone, or if you're low on battery, etc. Couldn't imagine ruining a $30 steak because my cell phone locked up. Ha ha.One suggestion : pickup on the seven quart plastic cooking container in addition to the 12 quart that everyone seems to have. The seven quart is perfect for two or three steaks, the water heats quicker, and I'm sure the heater runs less often to keep the lower volume of water heated.If I had it to do over again, I would probably buy the next model up that contains Wi-Fi(instead of just Bluetooth). Three bags fit with space for water to circulate around them.
