I'm a trained pastry cook and am not intimidated by filling & stacking cakes but when I'm making things for my family it's nice to speed things up a bit. These work admirably for that. They bake quickly, release easily from the pan, come out level (as long as you don't overfill with batter), and the pocket is a good size for filling. Fill two, let the filling set up in the fridge, quickly flip one on top of the other, and you are good to go with icing (or not). Unless you have a large appetite or are using very light/simple cake & filling, using two of these pans to make one filled & stacked 4" cake will give you about four servings. I recommend using a light filling (mousse or whipped cream or something similar) or else you will have a very dense bite of filling, especially if you plan to ice with an American buttercream. Review: Great little pans! - I only bought the one set of four, so I made a small regular cake in an 8 inch pan and then I made four of the mini cakes which will equal 2 cakes after I put the filling and place the layers together. So it looks like the cakes use about half of a box of cake mix. According to the recipe, one box of cake mix makes 5 cakes. I believe that means that you will have 10 halves to make 5 cakes. Unfortunately, the container has 4 containers, so even if I bought another set, I would have just a little too much cake mix for 8 pans. You will need to cook some cakes, remove them, and cook another batch. I live in Arizona and bake and cook year round not worrying about heating up the house too much, but that seems like a waste of energy to me considering that the oven will be on 20 minutes longer for another batch. If these came with 5 pans, that would make more sense. The cakes came out no problem. I love the recipes that they send with it and I have made some of my own combinations and they were lovely. Well made pans and I haven't had any problems with sticking and evenly cooked!
