While wood glues are rated safe once fully cured, who wants to take that risk? How much of that do you want to end up in what you eat? In 2016, the EPA set new standards, effective in 2018, that reduced levels of formaldehyde in composite wood products from the 2010 standards. I have a beautiful butcher block island in my kitchen, and for 15 years, it was my main cutting surface. Well, no more!This cutting board has a nice rustic look with a beautiful grain that compliments any kitchen decor. In addition to its aesthetic appeal, it is reversible and will not dull your knives. It will provide a lifetime of use, given decent care. Never EVER put wood boards (or utensils) in the dishwasher or expose it to heat by placing hot pans, etc on it. The other wonderful thing about unstained and unvarnished solid hardwood cutting boards is that when they accumulate scratch marks from your knives, which they will do, you can lightly sand them out. To keep this board beautiful and preserved, I first conditioned it with a homemade conditioner of fractionated coconut oil (food-grade mineral oil works as well) and beeswax that I use on all my kitchen wood utensils 3-4 times per year. After each use, I rinse it and wipe it down with fractionated coconut oil - I prefer using fractionated coconut oil over mineral oil to keep it totally petroleum free, but it’s just a personal choice. Properly conditioned hardwood cutting boards will not absorb water or juices from meats you cut, so I never worry about contamination from meats to vegetables. To make this a simple process, I keep a cheesecloth rag dampened with the oil in a small Ziploc bag in my handy kitchen junk drawer.My only critique is that the hole in the cutting board was a bit rough, but 5 minutes with a scrap of 400 grit sanding paper easily remedied this. My only gripe is that there is no juice groove to collect juices from what you cut, but I knew that when I purchased it. Routing one will resolve this - more of a project for me as I am not a woodworker, or find someone else to take care of it (-‿◦).I researched many alternatives before picking this one. At 10x15x1 inches, it is amply large for most needs, lightweight and easy to maneuver, sourced and made in America, and much more affordable than other comparable options that cost $100 and up. Given that it is American black walnut, it neither gives off no fumes nor imparts flavor to foods as some woods used for cutting boards can, and because it is hardwood, it’s very durable. For these reasons and more, I wholeheartedly recommend this cutting board!
