It keeps over a year in a glass jar in the cabinet without going stale. It doesn't have much flavor until you put broth in it. After I rehydrate it, I usually make a dark gravy and pour that over the beef-not. The strips are easy to cook (hydrate) and absorb flavors pretty well but I couldn't get over the scent, which doesn't go away even after they are cooked as you would a meat product. I noticed another reviewer describe the smell like dry dog food when you add water to it and that's so spot on.
