I ended up buying the Alpha Griller's thermometer shortly after buying this one which Has been a great buy. It reads, and it is digital. Specs for most "instant read" thermometers usually say maybe 8 seconds to settle. This thing climbs slowly, and comes to equilibrium in half a minute or more. That's no different from my old-school needle thermometer. It's off by several degrees in ice water and boiling water as well. It's fairly easy to read and I like the long probe.
