**Q: What is the % of protein of this flour? I know there is 4 g per serving but I need to know the % of protein in the flour. Thank you.**
A: 4 g per serving is the only protein information given.

**Q: How do you use this in a bread machine?**
A: I have a Zojirushi Home Bakery Mini bread machine.  It basically makes a half loaf.  The recipe calls for 1 2/3’s cups of bread flour and 3/4’s cup of rye flour.  So it’s a blend of both.

**Q: Is this ground fairly fine or is it coarse?**
A: It’s ground fine.

**Q: what is the expiration date of this item?**
A: Well, I imagine it depends on when you order and get delivery.  I ordered in early March,  and the expiration date is in December 2022. So, 21 months.  Your mileage may vary.

I like all the Bob’s Mill products I’ve used so far. This time I used the dark rye, and got the best rye with caraway seed ever! The recipe called for bread flour and wheat flour, too, so I wasn’t certain it would turn out right, but the rye flavor was perfection. I toasted the bread for a peanut butter and jelly sandwich, and the flavors were just right together. The loaf was a wonderful texture, although next time I will use a light crust setting instead of medium because once toasted the crust was very crumbly and I really like crust. The package seems quite small, until you realize how little rye flour you use; now I think I better make some gift loaves, and some to freeze so as not to waste any. I’d post a picture, but it’s already all gone!
