Same with preservatives, the sugar makes them susceptible to bacteria so preservatives are needed. You can always buy cherries and put them in a very slow oven and dry them yourself. This would be costly as USA cherries are out of season currently and the fuel to run your oven for such a long time is not cheap. You can always buy these cherries and rinse all the extra stuff away! These are great cherries for fruitcakes and cookies! **Q: How many cups of chopped cherries is an 8oz package? Recipes call for cups, not oz...** A: It's about a cup in the 8 oz package. As you can imagine the measurement for solids vs liquids is not the same, but in this case, it works out fine. I used them for a recipe recently and they worked out great! Incidentally, it was a joy to not have to chop them up, myself! **Q: Can these be frozen till next November?** A: I imagine they could be frozen but I've never tried it. Look for the "Use by" date on the lid. It is usually at least a year out from the date purchased (since candying fruit is intended as a way to preserve it.) If I don't use all my candied fruit at Christmas one year, I just keep the sealed containers in my refrigerator until the following year.
