Review: Great mats if you know what they're good for - These mats are used for aging soft cheeses. I used to use bamboo mats, but when you age brie or blue cheese on those mats the mold would stick to the bamboo and damage the surface of the cheese. These mats don't stick! Not even a little bit. I've noticed all the bad reviews on this product are from people who don't realize how to use these sheets properly. They are not for draining cheese (only when you age it) - you use plastic cheese molds or cheese cloth for that. They are for aging soft cheese in your "cheese cave" and making it easy to turn your cheese every day without it sticking to a surface.

These mats are used for aging soft cheeses. I used to use bamboo mats, but when you age brie or blue cheese on those mats the mold would stick to the bamboo and damage the surface of the cheese. These mats don't stick! Not even a little bit. I've noticed all the bad reviews on this product are from people who don't realize how to use these sheets properly. They are not for draining cheese (only when you age it) - you use plastic cheese molds or cheese cloth for that. They are for aging soft cheese in your "cheese cave" and making it easy to turn your cheese every day without it sticking to a surface.
