When you first buy its relatively young an fresh, very suited to making genuine carbonara. Once you’ve had it open a while, it becomes very nice for grating in to salads, or adding to other cooking. I’m lactose intolerant, but a smallish grating of this doesnt cause me many problems, so im assuming it’s fairly low in lactose.
