It is not recommended to use this for small dogs.

Can I make one of the panels like a door to go in and out of the pen easily?

The pen is easy to step in and out of. Or you can easily bend over and reach in. I’m not exactly sure if you can make one of the panels operate as an actual door.

could you put two together?

I don't know why you couldn't put two together as long as there was sufficient support under the pen. I use mine with neonatal kittens and usually start out using only two panels per side, then add more panels as they grow.

how do you keep water bottle on it?

It depends what kind of animal you need the water bottle for but if it's for a Rabbit, they need a bowl, not a water bottle. They drink more than cats and dogs so they need more than drops from a bottle.
