**Q: Can I used ground pork from the grocery or do I need to grind my own?**
A: For fermented sausage, it is very important that you have a large grind of very well defined particles. Pre-ground meat is usually too small a grind and has very little particle definition. It is always recommended to grind your own meat very cold with a very large gauge grinding plate.Check out the UMAi Dry YouTube channel for videos demonstrating this.

**Q: How much salt?**
A: For 5# of par-frozen large ground pork shoulder meat, 3% non-iodized Kosher salt and 0.25% (about 1 tsp) Instacure #2 slow release curing salt.

**Q: Does this come with the fermentation stuff?**
A: No. You need a Dry Sausage Kit to get the starter culture.
