**Q: What is the country of origin (manufacture)**
A: The same company makes all of the cavatelli makers with the same casting shape (Cucina Pro, Fante's, Vitantonio, Paderno, King Cole, Bethany Housewares, new Vitantonios, and some others) in Taiwan. They own the patent and make them to order for retailers.

**Q: I just purchased this and the brochure doesn't say how to make sea shell? any help would be appreciated.**
A: Amazon isn't at fault. The seller is just repeating the description on the box the product comes in. This cavatelli maker really only makes one shape pasta, although by varying the moisture content of your dough, and the width and thickness of the dough strip you feed into the rollers, you can affect the shape. If your dough is very dry you will get little bricks because it won't curl. Kind of cute, but not cavatelli.

It also says it makes gnocchi, but in the included recipe booklet the recipe is titled potato cavatelli. So, the question is: Is potato cavatelli the same as gnocchi? Apparently a lot of people think so (I do not.). I'll leave that decision up to you.

Pasta making seems to be as much art as it is science, so plan on experimenting a bit. Don't give up if your first batch doesn't come our as you expect.

A: Maximum counter depth is 2".

Where has this been all my life?? I LOVE this Cavatelli Maker. I have used it just about every week since I got it. I have, in the past, made Cavatelli by hand and it is a slow labor of love. Some would be too thick, some would be too thin, and so they cooked unevenly. THIS baby makes it so much easier! The machine comes with a small instruction and recipe book that really helps. It is SO easy to use - just clamp it down and start rolling. It is important to get the dough texture and consistency right (as it would be with any pasta making, either by machine or manually). Once you master that, everything else is a cakewalk. The machine is sturdy and well made. The clamp works perfectly and keeps the machine stable while I am cranking away. The crank part turns with ease. It is important to only clean it with a brush (not included but a cheap paint brush will work). Do not immerse it in water. I do use a barely damp paper towel to wipe off the paddles, especially when I am making multiple batches. A bit of the pasta dough can dry and stick to the paddles. I have made up to 3 pounds of Cavatelli at a time with ease. Next weekend we will be making enough to freeze (10 or more batches depending on how many I can manage hand knead). Seriously I love this machine. I want to send one to all of my adult nieces to carry on the homemade pasta tradition!
