This stuff is great!! Not quite as good a scratch gumbo, but close enough to fool your visiting yankee relatives into thinking you been working all day making up roux!! ;-)It's not a real strong roux, but is quite delicious. I add chicken breast meat (thigh meat added gives it extra flavor), andoullie sausage (Eckrich Smoked Sausage works fine if you're not a fan of andoullie), and shrimp. Simply follow the directions, although I would like to see Bayou Magic revise the directions. This is important... use cold water as directed, BUT... DO NOT dump the entire package into the kettle all at once. Add it slowly, stirring all the while. If you fail to do this, the gumbo mix will clump up and stay clumped throughout the cooking process. Biting into these clumps of seasoning does not taste real well. Learn from my impatience and mistake!!! I've used Bayou Magic products for years and have never been disatisfied. Buy with confidence and ENJOY!!!!
