Excellent! - Having used predominantly the same brand of fish sauce my whole life, I have gotten more into Asian cooking over the years and have cooking more diverse dishes … teaching me that fish sauce is like soy sauce … there are many types and some types are more appropriate for some dishes than others. All that to say this is an excellent fish sauce. Less salty than, say, Red Hook. Three Crabs is commonly used in Vietnamese dishes. Review: Tasty and glad I have it. - I am not a fish fan. I dont like fishy things and im not a big seafood fan. I bought this as an add in to certain dishes and also for making beef jerky. I haven't made the jerky yet but I did try the fish sauce straight on its own. (I know that's not recommended because of how strong the flavor is but I feel that the best way to use an ingredient is to really know its flavor, strength and what it can add to a dish.) That being said, this was a very good flavor. I can see how this could add a very delicious full flavor to a savory dish. Im already thinking of adding dashes to stir-frys, eggroll filling, beef jerky marinades and more. It's got a salty umami flavor that can get over powering if used too liberally but when used modestly it could have an "mmm this is so good, whats in this?" kind of feel. It's not "oily" it reminds me more of a soy sauce. The package came fast, and whole fully sealed with no problems. The color and texture looks healthy and good, not discolored or old looking. Some countries require that it be listed on the label if it does, but not all. Canadian Celiac organization says "A variety of vegetable proteins, including wheat gluten, corn protein, soy protein and sometimes peanut protein, are hydrolysed commercially for use in foods as flavouring agents, and sometimes as texturizing agents". It is not clear for this product which is a bummer as I have both a huge bottle that I "was" cooking with and celiac disease :( **Q: I see it doesn't need to be refrigerated. But how long does it last before it spoils or tastes bad refrigerated and unrefrigerated?** A: We kept it in a cabinet for years, using it only occasionally (I used it for ramen noodles and curry, as it gave a sharp pungent aftertaste to either; also I added a little in kimchi). Soy sauce and fish sauce are both fine so long as they are kept out of the hot sun (I've tasted soy sauce after it's gotten hot and it has a very distinctive flavor, though I really don't mind it).
