Mesophilic Culture MM100 is a premium 50 DCU freeze-dried starter culture from France, designed to inoculate 25-50 gallons of milk. It produces a distinctive butter-like flavor and open texture, ideal for soft and semi-soft cheeses such as Brie, Camembert, Gouda, and Feta. ## Description

This is the mesophilic culture to use for a more pronounced butter like flavor and a somewhat more open texture For use in soft ripened, and fresh cheeses such as: Chevre, Cream Cheese, Brie, Camembert, Gouda, Edam, Blue, Feta, and Havarti. This culture contains the 2 primary cultures of MA011 but the diacetylactis will produce CO2 and a butter like flavor/aroma. Cheese made with this culture will be somewhat more open in texture and in a cheese such as gouda will provide the desired, small round holes. Contains: (LL) Lactococcus lactis subsp. lactis (LLC) Lactococcus lactis subsp. cremoris (LLD) Lactococcus lactis subsp. lactis biovar diacetylactis WHAT IS DCU? A DCU is a proprietary measurement which is neither a weight nor a volume. Instead, it is a measure of the bacterial activity contained within the entire packet, since creameries and commercial cheese makers use these packets in their entirety. A 50-DCU packet of a given lot today could weigh, for example, 14 grams, but tomorrow's lot with the same DCU value could weigh 17 grams. The entire packet as a whole will have a consistent total amount of activity. Home cheese makers only use a very small portion of the packet at one time and must slightly over-inoculate anyway; therefore, this DCU measurement and its subtle variability between won't affect your homemade cheese.

## Questions & Answers

**Q: How much do you use for 2 gallons of milk that normally uses a packet?**
A: Depending on the cheese you are making it varies from 1/4 tsp. - 1/2 tsp.  Please note that tablet rennet is not included in this as this is true culture.  You will need to add rennet.  I prefer our microbial, sold on here as well.  Feel free to reach out to me for any recipe help.

**Q: I'm looking at making 1 quart batched os sour cream...how much mesophilic would I use?**
A: I would

1/4 tsp. Culture should be plenty.  Best, Paul

**Q: Will this product lose potency if shipped during hot conditions?**
A: It remains stable, however, once opened it should be stored in a freezer.

**Q: How long to culture for creme fraiche before adding rennet?**
A: Hi, I don’t actually use this or rennet in my Creme fraiche.  I use cultured buttermilk but if you want to use this, it would take about 1/4 tsp. per 2 cups heavy cream. Warm milk in a water bath to 70 degrees F, add culture or cultured buttermilk. Let sit room temp for 24 hours, stir gently and refrigerate.  I actually make it in a quart mason jar so I can just store it in that as well.  I cover the top of the jar with a coffee filter and band while making then fully cap when done.  Best, Paula
