Saffron is harvested by hand on daily bases for about a month before sun light and heat burn the saffron stigma. β˜… Saffron is used in variety of Persian, Spanish, Italian and seafood dishes. It is growing in Khorasan, Aragon Spain, Greece, India and Turkey. β˜… The stigma is about 2 inches and our saffron has only the top portion of the stigma. For cooking infuse 1/2 teaspoon saffron threads into warm water and let sit for about 10 minutes. You will see the saffron color start releasing from the stigmas. β˜… 1 gram of saffron is enough to prepare a dish for 4 to 6 people. Saffron threads should always have the shape of a trumped. It should never loose it’s shape or color (thread turning white) once infused into water, otherwise it’s fake saffron.
