## Overview

Clearjel Cook Type is a 5 lb bulk modified cornstarch designed for professional and home bakers. It excels in thickening fruit pie fillings and canning mixtures, tolerating high heat and acidic ingredients without breaking down. This natural, vegan starch activates upon cooling, delivering consistent, restaurant-quality textures in your homemade preserves and sauces.

## Description

Clearjel (Cook Type) is a modified cornstarch used by many commercial bakers in fruit pie fillings. This cornstarch works well with acidic ingredients and tolerates high temperatures. Use Clearjel if you're canning homemade pie fillings, since it doesn't begin thickening until the liquid begins to cool.

## Features

- Clearjel (Cook Type) is a modified cornstarch used by many commercial bakers in fruit pie fillings but is used increasingly in homemade fillings due to its unique structure.
- This cornstarch works well with acidic ingredients and tolerates high temperatures.
- General Directions: Use as a thickener. Use approx. 1/4 cup clearjel to 1 quart of liquid. Bring liquid to a boil before adding clearjel. Do not over boil as this will cause the starch to break down and thin out again.
- 5 Lb (80 Oz) Tub - Distributed by WinCrest Bulk Foods
