I use a stock pot. Mine is 12 or 16 quarts. Plenty large for whatever thing I’m cooking. **Q: What are the minimum and maximum water depth for this sous vide. Will a container 7 1/2 inches deep accommodate it?** A: This heater can accommodate many different depths, because you have the choice of sitting it on the bottom of container or hanging it from the side. The minimum/max measuring from the flat bottom is 2 3/4 to 6 1/4 inches. So if you set it on the bottom of 7 1/2 pot it might be a little dicey, but no problem just hang it from the side. **Q: what does the 9" measurement refer to?** A: Good question. Possibly the outer packaging, because the Sous Vide thing itself is 14.5" x 2.75" x ~ 4.5".
