The product is fermented in production which helps to preserve it. Incidentally it is a great product and I recommend it. **Q: Is this paste gluten free?thank you** A: I cannot see in photo or have ever heard of wheat in this product, ingredient photo does NOT show wheat, basically it is chilli and fermented soy bean, google it and see how it is made by families in Korea. Age is quality when homemade. **Q: Does this product containany form of alcohol? As korean pepper paste usually contains some sort of alcohol such as rice wine, ethanol or red wine etc?** A: it does contain alcohol but only a very small amount 3% spirits which I assume would evaporatevwhen cooked. **Q: is it vegetarian** A: Yes, just looked at ingredients and no animal products.
