## Overview

The King Deluxe 800 Grit Waterstone is a medium-coarse Japanese whetstone designed for efficiently restoring dull or damaged knife edges. Measuring over 8 inches, it offers a professional-sized surface that requires soaking in water before use to prevent clogging and ensure a consistently sharp edge. Ideal for both novices and culinary enthusiasts, it comes with clear honing instructions and delivers premium sharpening performance at an accessible price point.

## Description

Unlike Western man-made stones, water rather than oil is used on Japanese stones to prevent the surface from being clogged with metal particles. We offer two classes of stone: coarse and finishing. The coarse stones are 250, 800, 1000, and 1200 grit. The 250 and 800 grit are faster cutting and used for repairing nicked edges or reshaping a bevel. The 1000 or 1200 grit stones are used for the first stage of the actual sharpening. Japanese water stones are softer than Western styles causing a fresh, sharp surface to be continually exposed to the tool edge.

Review: Excellent Japanese whetstone - This is a very good Japanese whetstone. Being a 1000 grit medium stone it's good to maintain a sharp edge to a kitchen knife. It's a good size which is typical of "professional" stones. Often substandard and cheaper stones are much smaller than this one. It's also good value compared to Shapton or Naniwa which are often double the price of King. The whetstone will need soaking in water for a few minutes before use and let it dry thoroughly before storage.
Review: Good quality stone at reasonable price point - I've had cheaper whetstones before which were ok I guess but didn't realise till I got this king delux 1200 grit stone along with the 800 grit what these sorts of stones are capable of. I also got a 6000 grit to finish off. The 800 arrived first so started with that on a Japanese style blade with a factory bevil of 10 degrees either side for an inclusive 20 degrees. Never sharpened that low an angle before so looked around and found a set of angle guides which had a 10 in the set. Once I got used to what the angle should feel like I didn't need it any more so went free hand on the 800 stone and oh wow I thought the knife was sharp out of the factory but it put a scalpel like edge on it and then when I put it on the 1200 stone to really dial in the edge and finally polish the edge on the 6000 I didn't know a knife could get so sharp. Sure these stones take a while to get used to and can be time consuming to use properly but it's a cathartic experience and if you appreciate a sharp kitchen knife and like the idea of doing something in a traditional way it's worth looking into a set of these stones. Sure there are more expensive stones out there but at this price point they are a good option for learning on before investing in more expansive stones

### ⭐⭐⭐⭐⭐ Top quality stone
*by A***R on 24 November 2023*

Performs beautifully, cutting quickly, with nice feel and feedback. Builds up slurry without wearing quickly, after half an hour of use was more or less still flat, half a dozen light passes with the stone flattener and it was perfect again. Been at the sharpening game for over fifty years now, You simply won't beat these King stones at this price point. Suitable for professional or domestic use, can honestly highly recommend this stone and King stones in general.
