Review: A very versatile, well made Dutch Oven. Great for bread making. - I bought this Lodge cast iron set mostly for bread making. My previous method has been dropping the dough into a hot Le Creuset 24 cm classic casserole with high sides and it is too clumsy and the risk of getting a burn injury is too high. So this Lodge combo appealed to me because I can turn it upside down and use it as a shallow base bread oven. My Lodge combo arrived in well packed and ready to use. Skillet and top surfaces are both perfectly flat so will work well on a glass/ceramic/induction hob. The pre-seasoning from the factory was fine. I hadn't used non-enamelled cast iron for decades but I am really liking this. It works really well. Transferring the dough was much easier and safer and I got a great result first time using my usual timings. I have also enjoyed cooking using the skillet. It was easy to clean and to keep seasoned. I think this is a great Dutch Oven. It is less than half the price of similar Le Creuset item, is more versatile as you can use it either way up, and is much, much better quality than cheap products which can be poorly cast, have uneven thickness and chips and even cracks. It is very heavy of course but this should not come as a surprise. edit: 3 months later. I love it! I appreciate the quality. The bases are flat so work perfectly on a flat (induction/ceramic/glass) hob. I bake bread twice a week and also use the lid as a skillet and the whole thing as a regular casserole all the time. Since I bought an induction hob I like it even more. It can simmer, slow fry, hot stir fry, saute, steam, bake, keep warm, and you can move it to and from oven and hob, and all with great control. The seasoned surfaces get better as you use them. Soon you have really beautiful non-stick! When washing up it is great to see water just bead up and fall away. This is the most versatile cookware I have used. Induction hob with cast iron pans is a great combination. edit: 4 months after purchase. You'll see some criticism of Lodge pre-seasoned cast iron not having a perfectly smooth surface. Cast iron typically *is* a very slightly textured surface when new. This changes as you use it. As the surface gets more seasoned it gets smoother. If you look after the pan then that slightly textured surface changes. I do give my Lodge cast iron a quick soapy wash after each use, even a good scrape sometimes, then dry it and rub a tiny amount of oil into it. With each use it gets a little more seasoned. It stays clean, without food residue, does not rust. It does get smoother time by time.
Review: Best thing you can own. Your kitchen will love you for it ;-) - I'm joining the brotherhood of the 5-star review! I'm such a petty person, I review lots of products, rarely giving 5 stars. I have to agree with the general consensus. The Lodge Combo is worth the price and worth giving 5-stars to. It is far easier to use than I expected. It is very easy to season and takes it quickly also because it comes pre-seasoned you only need one to two seasoning sessions to truly turn it jet black and "yours". It heats up quickly, cooks very evenly. I do recommend to also buy a sleeve handle. They go for £4-£5 and are worth it because then handling the combo is free of any danger. It's really easy to clean as well. All you need to do is, once you've finished cooking whatever you were cooking or frying, simply pour in hot water and let it simmer for a few seconds, drain it down the sink, wash with water and then wipe off all the water with either a designated towel or paper towel. There really is no need to put on a layer of oil, it's totally unnecessary this Lodge piece comes fully seasoned whether you add your own or not so as long as you wipe it dry it won't rust. I found that the best combination is to heat it up on the stove as is, slowly, then add a bit of olive oil and spread it around then add a little bit of butter and fry/cook whatever I wanted. The combination of butter over oil really makes it 99% non-stick. If you do a seasoning session of your own, even better. It can be used for just about everything! Frying pan, cooking pot, Dutch oven, bon fire tool, you can use it as a pizza tray or you can use it to bake things like Shepherd's Pie and Lancashire Hotpot. Honestly, I've tried a few pans by De Buyer and this Lodge Combo beats everything blind. I can honestly say, now that I've had it for a few months, seasoned it myself and learned how to use it, that if I could have only one thing I'd have this Combo!

## Features

- NATURAL NON-STICK COATING - Pre-seasoned with 100% natural vegetable oil (is kosher and contains no animal fat) at Lodge’s foundry in South Pittsburg, Tennessee, USA. This produces an easy-release finish that will improve with regular cooking and if seasoned with additional oil after each use. Coating is non-toxic and contains zero harmful synthetic chemicals (unlike most non-stick pans).
- UNPARALLELED HEAT DISTRIBUTION AND RETENTION - Lodge’s legendary cast iron, crafted using more than 125 years of knowledge and experience, is as-good-as-it-gets for getting hot quickly, distributing the heat evenly across cooking surfaces and for retaining heat. Get yours now to begin cooking more economically!
- ENDLESSLY VERSATILE - You can use Lodge’s premium cast iron cookware over any heat source: hob/stovetop (all types - including induction), in the oven, on the grill - even on an open flame (barbecue or campfire)! No method of cooking is off the table either: fry, sear, sauté, roast, bake, braise, boil and more.
- EASY TO CLEAN - It’s true: cleaning cast iron cookware is likely to be different to what you’re used to, but don’t let that put you off. It’s incredibly simple - 1) wash by hand using a small amount of soap (if required); 2) dry quickly and thoroughly with a cloth or paper towel; and 3) rub a light layer of oil onto the cooking surface and then wipe until no residue remains.
- A LIFETIME (AND MORE!) OF USE - Lodge cookware is built to last so that it never needs to be replaced! As long as it is seasoned with oil after each use and treated with care (including avoiding the dishwasher and not allowing air-drying), then a lifetime of efficient cooking awaits. Should rusting occur (which is possible with cast iron), then it can be easily removed. Lodge cast iron is also fully compatible with metal utensils.
- Functions as a Dutch oven, skillet, lid and deep skillet - all in one!

## Questions & Answers

**Q: could anyone please tell me what size loaf you can make and the quantity of flour used in the combo cooker thank you**
A: I agree with RBlood. A boule made using 500g flour fits perfectly. With an electric oven I heat the lid and pan placed on two different racks to about 260C then put the proven boule into the pan removed from oven, slash, put pan back in oven and place lid on top so lid has not left the oven. After 20 mins I remove lid leaving the boule in the pan but keep lid in the oven on second rack so it stays hot and just about ready for making second boule. After taking lid off I turn oven down to about 230C. Total baking time needed is about 40 minutes. For the last 5 minutes of this time I turn oven back up to 250C to start getting it ready for the second boule.

**Q: Is it possible to wash off the 'soy based vegetable oil', even though it has been heated to such a high temp?**
A: it doesn't wash off, because it had effectively become a polymerized coating. It's quite difficult to strip the seasoning off. you shouldn't wash with soap, because you want to keep the oil from the food that you've cooked as a light coating (just enough to make it shiny, not enough to make it sticky). Lodge say this about their soy coating if you are concerned from an alergy point of view: Lodge uses a soy-based vegetable oil to season our cookware. The oil is highly refined, and all proteins that cause soy-related allergies are eliminated. The oil contains no animal fat, peanut oil, or paints.

**Q: Can you remove the handle**
A: No, handle is integral to the unit. It's also very heavy so the handle is invaluable. Without it getting the unit in and out of the oven would be harder

**Q: Would this pan be big enough to cook a whole chicken**
A: Yes, although not massive one. I regularly cook a 2 kg one and it just fits. I have made a rack about .75 inches high to keep the chicken out of it's own fat. I find it cooks very quickly, so until you are confident watch the first go carefully.
