These are genuinely on another level compared with standard tinned anchovies. The texture is the first thing you notice: firm, meaty and beautifully tender rather than mushy, with a rich flavour that’s intense but surprisingly balanced.The curing really makes the difference. There’s plenty of that deep savoury, umami character you expect from a good anchovy, but it doesn’t just taste overwhelmingly salty. The olive oil is excellent too and adds a richness that makes these good enough to eat straight from the tin.I’ve had plenty of anchovies over the years and these are easily among the best I’ve tried. You can tell they’ve been treated as a quality ingredient rather than just something to throw into a sauce. Absolutely worth paying a little extra for if you appreciate proper anchovies.

Having seen what I imagine was a repeated episode of 'Rick Stein's Spain', where he visited Cantabria, I thought I would try these anchovies.I don't eat salted foods, very rarely add salt to food, or even add salt when cooking food. Yes, I know all chefs and cooks out there will be gasping in horror I am sure!So to get the picture, I don't do salt. Upon opening the tin and first tasting a delicate slither, hmmm a bit salty I thought. However, I soon managed to eat a whole tin to myself! Really delicious!I'm sure the handmade element as opposed to factory-line process makes them taste all the more amazing.
