## Description

Roasting suggestions: We encourage you to experiment with the KIANJEGE coffee to find the balance you like best. We have found that the range this bean is happiest roasted is somewhere from Half City to Full City. We prefer just slightly less than Full City roast for a pour over method. Best enjoyed after the cup has cooled from hot to very warm. The flavor profile changes as the coffee cools; you can experiment with that as well. The Kenyan Bean can handle very light roast profiles. If you like a ‘bright’ acidic coffee, there are few as good as this Kenyan. It’s an acquired taste, but delicious if you have the palate for it. Cupping Notes: Flavors will vary somewhat by roast profile, but in general: volcanic, earthy, balanced, and with hints of citrus best describe this deliciously complex and unique coffee.

Extraordinary coffee. Crème de la Crème.  It's been decades since I had a good cup of Kenyan coffee.  It's like after the supply of Kenya AA was interrupted a number of years ago, everyone forgot how to roast great Kenyan coffee.  I had to completely change my roasting technique because this coffee is so full of aromatic oils, it's tricky to get the roast just right.  I'm still working on it, but I can already tell the potential for coffee perfection is there.  And I'm going to have to cut back on the amount of ground coffee per cup because this coffee is so rich.Update:  I finally got the roast to perfection, and was able to repeat it.  The trick is to get all the oils converted without burning or baking it.  The beans should be as dark or darker than City+ with uniform color, but with a completely dry surface, and still have light colored chaff. I had to start with a cold drum to slow down the drying phase. I brought it to 1C at about 11 minutes and held the air temperature in the drum to 425°F until the first crack completely finished.  I turned off the heat and let it coast until the smoke started increasing, which only took about a minute, then quickly cooled it.  At 48 hours, the flavor was already intense, balanced and complex. If I had to pick one adjective to describe it, it would be "intoxicating."

I really like these beans!  I have been roasting for about a year now and these are the first beans that I have tried that roast consistently from batch to batch.  They are also significantly larger than other beans that I have tried and for some reason they seem to roast more consistently in my roaster.  Whatever it is about these beans they work and make fantastic coffee.  Also you can back off on the roasting and still get a nice smooth,  flavor in your coffee from french press to espresso.  I copied a picture of some beans that I roasted and this level of roast makes great espresso!
