I’ve been baking/cooking for 40+ years and I’ve never heard of this type of rice paper until this past Christmas. I wanted to make authentic Siera Panforte and the recipe calls for these. Panforte is super sticky so the sheets are placed in the bottom of the pan before the batter, then on top of it. (I learned in the process to cut the paper to fit the cake without overlapping at all) After it sets, the rice paper seems to disappear and become part of the cake, giving it a smooth & nonsticky surface with absolutely no added flavor. The recipe also calls for powdered sugar to be sprinkled over the rice paper. This step is just to make it pretty. It doesn’t actually need it when the rice paper serves its purpose well. The package comes with way more than I’ll ever use to make panforte so I’m hoping I’ll find some other fun recipes to use it with.
