## Description

Product Description Bizen is the historical province name for central Okayama. Maboroshi means illusion or phantom in Japanese — a nod to the near-mythical quality of the Omachi rice strain that defines this sake. Omachi is the oldest cultivated sake rice still in production: difficult to grow, prone to lodging, demanding on the brewer. Miyashita Shuzo polishes it to 60% and ferments it slowly at low temperature, producing a sake that sits in an interesting position — richer and more structured than most light Ginjo styles, but clean enough to drink alongside delicate food without overpowering it. At 15.3% ABV, it has enough body to hold up at the dinner table. The soft natural acidity means it doesn't fight with vinegar, citrus or lightly dressed dishes the way some aromatic whites can. Chilled, it shows melon and white peach with a hint of rice sweetness on the finish. Gently warmed, the grain comes forward and the sweetness gives way to something quieter and more savoury. Serve at 8-12°C. If warming, keep below 45°C to preserve the Ginjo aromatics. Review: Great saki for beginners - If, like me you fancy trying saki but don't know where to start, this is a really nice Junmai Ginjo, full of fruity flavours & most suited for Western palettes. DON'T bother with any of the cheap varieties on here. They all taste revolting & are far more likely to put people off journeying further down the saki 'rabbit hole'. Decent saki is not cheap, it's as simple as that but that doesn't mean you have to spend a fortune to find a really nice example that suits one's tastes. The only problem I have discovered is that it goes down a little too easily (especially when you drink it from those small bowls). I very rarely drink but this is the 2nd bottle I've ordered this week already since discovering it (so be warned lol). I'll definitely be buying more & trying different varieties from now on.

If, like me you fancy trying saki but don't know where to start, this is a really nice Junmai Ginjo, full of fruity flavours & most suited for Western palettes. DON'T bother with any of the cheap varieties on here. They all taste revolting & are far more likely to put people off journeying further down the saki 'rabbit hole'. Decent saki is not cheap, it's as simple as that but that doesn't mean you have to spend a fortune to find a really nice example that suits one's tastes. The only problem I have discovered is that it goes down a little too easily (especially when you drink it from those small bowls). I very rarely drink but this is the 2nd bottle I've ordered this week already since discovering it (so be warned lol). I'll definitely be buying more & trying different varieties from now on.
