If it looks lumpy, don't worry and don't bother sifting. As you whisk it in, the flour will smooth out. Experiment with it to avoid using too much or it will taste starchy. For an Asian-themed dish, whip an egg white lightly with a little water. In a separate bowl whisk some flour w/ a little salt, garlic powder, and small amount of 5 spice powder. Dip raw sliced chicken breast pieces into egg and then into flour. You can fry it in some coconut oil on med-low heat or spritz it with oil and bake on an oiled cookie sheet @ 350. Frying it is better. I haven't tried it in pancakes yet. Am planning to use it with coconut flour and some hazelnut to make crepes. An excellent product.
