It reminds me of Summer Sausage, with a smoked bacon flavor with pepper, and other spices. I did a taste comparison it to some US purchased Genoa Salami, and the Pick is noticeably superior. Not even a contest. I also did a taste comparison to Sibiu Romanian Style Salami (Bende). The Sibiu was very good, but it does not have the smoked bacon flavor. So my with my taste test Pick salami is the winner. Try this salami, and you will see a noticeable positive taste difference!
Review: The Real Thing. - The real thing with the "Pick" label dangling from it. Unfortunately they do not sell this salami at your local grocery store and there are some poor imitations out there as well. (My salami had the production date of 3 and a half months prior to delivery; I did see myself the brownish discoloration of the slice close to the outside rim mentioned by another reviewer. I do not think it affects the taste at all.) It is delicious, it has a unique taste and it is perfect for sandwiches.

**Q: I didn't see an expiration date on it, how long are they fresh?**
A: Salami has a long shelf life, I've kept them unopened for about 2 months. In our house they disappear quickly once opened though! They do stay fresh in the fridge, I would just slice what you need and use within a month.

**Q: Is this sausage made from mangalica pork?**
A: It doesn't say what kind of pork, but it is a very good very hard salami and tastes just like Salam de Sibiu

**Q: how is it made?**
A: It is a jealously guarded Hungarian secret!

**Q: What is the best way to store this salami?  How long will it keep?  Can you freeze the salami for an extended life?  For how long?**
A: I am not sure how long, but as long as it is uncut, room temperature is OK. Once it is cut, I would keep it in refrigerator. I am not sure about freezing, but would not think it is a good idea.

This Pick salami's recipe is really good, and the fat content gives it a buttery flavor and smooth texture. It reminds me of Summer Sausage, with a smoked bacon flavor with pepper, and other spices. I hate to give a poor review, but when the product is old, impossible to peel the skin off (paper?), and is brown all around the outside of the salami, I have to give a poor review. We have loved Pick Salami for years, having eaten it in Budapest, Hungary many times over the years. These 2 salami's did not resemble the usual ones I have ordered from other vendors. It wasn't covered by the usual white protecting paper. What was covering them was literally impossible to peel off and our meat slicer could barely cut through the meat!! It tasted OK but was brown all around the edge and very dry. It was impossible to slice with a knife, and I used several to try to slice it. The order arrived ahead of time and was packaged well. But, the product itself was totally unsatisfactory. We did eat it, as there was no time to re order another 2 from a different vendor, and get it in time for a get together. I will not order from this vendor again.
