I have also take classes for decorating and cake preparation. This little gizmo works well overall. It does work best with a frozen cake, as that minimizes tearing. I took off a star because while it's easy to adjust, the wire can slip easily despite the notches designed to hold it in place. EDIT: I took off two stars. Depending on the kind of cake you are cutting, it doesn't always work so well. I had a hard time with a dense pound cake as well as a light, fluffy white cake.
