The taste profile wasn’t what I preferred and the mouthfeel was a little dry. Mixing, rolling out and cutting caused some of the noodles to break. So, the next batch of pasta I used half chickpea flour and half Italian wheat flour with a little bit of dill seasoning. Definitely a fan of that batch. It was more pliable and easier to roll out. It had a nice chew, good flavoring and I used it to toss in my Thai noodle chicken salad. Delicious!
