This has a lower GI (glycemic index) than the usual type of wheat used in American pasta - & it’s still very tasty. It also cooks in the same time as “regular” American pasta.

I've tried the curly ones, the weirdly shaped ones, etc. (I forget the "official" Italian names... you know what I mean). This straight-style linguine pasta tastes the best (to me) and cooks the easiest. The other ones get soft really fast and I always overcook them. These ones -- I find them very easy to cook to the correct level.I've bought these many times. The results speak for themselves.

My wife is always looking for ways to reduce carbs while increasing protein and fiber. This pasta starts out at only 35 gm of carb (as opposed to 42 for most white flour pasta and 38 gm for Barilla plus), has 4 gm of fiber (as opposed to 2 for most white flour pasta), and 9 gm of protein (as opposed to 7 for most white flour pasta and 10 for Barilla plus). Net carbs are 40 for most white flour pasta, 34 for Barilla Plus - but only 31 for Einkorn pasta. In addition, it naturally has 9 gm of protein as opposed to the 7 in most white flour pasta and the 10 for Barilla plus which adds egg white and chickpea flour, so we were pleased with the nutritional profile. We also we fine with the taste and texture. After reading Wheat Belly by William Davies, we are committed to reducing wheat, and using Einkorn, which is un-hybridized wheat. What a concept - wheat the way NATURE intended it!

The taste is just like any quality whole wheat pasta but none of the harmful gluten. I am gluten sensitive and yet this pasta has no bad side effects. We love it. It's a 10!!
