Can I use this to send two audio channels and receive two audio channels at the same time?

Yes, with a couple of gender turnarounds you can easily send and receive audio over shielded cable.

Two questions. It says to use with sheilded cat 5-6 cable. Is this a requirement? Is it bi-directional?

I ran it about 400’, bi-directional. It worked flawlessly. I was so impressed. We essentially had a large event with 2 separate audio rooms running. I tied both together running aux outs of each mixer to a couple channels in without an issue at all. No extra noise (buzz, hiss)! Ran it again one direction using it to have the wireless mic receivers at the stage, with the mixer several hundred feet away. Will by more!

does microphones work with this catbox

Yes, you can use a microphones with the CAT Box system. You would need a female (CAT BOX FX) to connect to the microphone's XLR cable and a male (CAT BOX MX) on the other end of your shielded/grounded CAT cable that you can connect to your PA.

Are the tx & rx capable of sending 48v phantom power or do you have a model that does?? These look perfect for my setup!!

This model is capable of 48V phantom power right now! Just make sure you are using shielded cable and you're good to go.
