Good Start to the Real Thing Minus the Black Pepper
Good but Still Not as Authentic. I am Cuban and grew up with amazing home cooking. My grandmother used to cook for a living in Cuba and really spoiled us with delicious meals. The one thing that is Americanized in this book is that nearly every recipe has black pepper. This is the biggest No No is Cuban cooking! If they even suspect a tiny amount of black pepper you will get dirty looks from everyone around and the food will be considered ruined immediately Personally, I love black pepper as I grew up here but I have learned never to add this to any dishes that my relatives will eat unless I want another lengthy lecture on this subject.

Great book, glad I got.
Cooked one dish so far and it is very close to the dish we had at a cuban restaurant that we loved. A few minor changes and we will have it. Worth buying.

Modernized cuban recipe book
Loved the book. It is prepared for people like me who prefer to read in English and at the same time, the book gives you the Cuban name of the recipe, as the English version makes no sense unless it is in Spanish, as well as the name of the ingredients in English. Great variety of recipes where you will have tons of fun preparing dishes that you know the name that existed within the old family.

cuban kitchen cook book
I bought this book because I know the author personally she is a child hood friend of my daughter and I love Cuban cooking though I am of Italian desent .This book gives people some idea of another culture and what they like to eat. The Cuban Kitchen

Utterly Delicious
I can usually find at least a few recipes I love when I buy a new cookbook, but The Cuban Kitchen is riddled with them. Every recipe that I've tried has turned out delicious, and my Cuban husband even says it reminds him of his family's home cooking.

It has lots of basic CUBAN recipes in it.Very helpfulI am sure I will refere to it in the future, and pass it on to my family

great cookbook
covers everything, from drinks to desserts. A nice touch is the substitutes for items not readily available outside a Cuban grocery. Made me hungry just reading the recipes.

Very good, full of recipes. I'm doing one tonight: Mac with shrimp, peppers, tomato sauce and capers.

The best of Cuban cuisine for the ordinary kitchen
WOW-- what a wonderful collection of recipes! Raquel Rabade Roque dishes out the best of Cuban cuisine for the ordinary kitchen in more ways than one in 'The Cuban Kitchen'. Apero, salad, eggs, legumes, rice, meats, baby food, 'for the pressure cooker', desserts, candies-- just an amazing compilation of authentic recipes comparable to Julia Child's masterpiece "Mastering the Art of French Cooking' (also published by Knopf).I bought this book because I am interested in Cuban cuisine as a chef and was not disappointed by the diversity of the recipes. The first dish I prepared from this collection was 'Codfish Vizcaya Style', which pleased my entire family, and the "saffron rice with vegetables' has now become a family favorite, appeasing my most picky eater. I am also heartened by the chapter on plantains-- an underappreciated ingredient not often found where I live in France, and still foreign enough in East Coast markets of the US.I recommend this cookbook to everyone!!

Quite dissapointed with this book that doesn't have any picture. But I will try some of the recipes anyway.
