I am using this cookbook to add some new tastes. I grew up eating homemade Danish pastries and cooking prepared by my neighbors but had little success with my usual cookbook. Most important to me is that these recipes are very clearly written and easy to understand and the ingredients are easily found. We love to eat salmon but are growing tired of our usual methods. This book has recipes for Cured Salmon (Gravlaks) and Salmon in Aspic (Lax i Gele) each of which can be done in five steps or less. There is a very approachable recipe for Sour Cream Coffee Cake which can be prepared start to finish in about forty minutes. I would highly recommend this book as a great intro to cooking from this region of the world.
