Q: Can anyone explain why to choose this over same brand stainless steel or stainless steel with iron handle? Why choose one of the three over other two?

Q: Does the lid handle stay cool? I have a Mauviel pot with a brass handle on the lid and it gets burning hot:(

it does get hot - the longer its over heat the hotter it gets.

Q: How are the ergonomics of it? Is it easy to pour the contents out?

I’m using it tonight! I use it almost daily in fact. I’ll admit I’ve had better handled pot/pans (all clad). This one, to pour, will need a towel/hot pad because it gets hot. But the quality of the copper pot is excellent. Will last a life time.
