As a pastry chef in a fine dining restaurant, making chocolates is not something that I take lightly. It is a very exacting process and there is definitely no room for ineffective equipment. These molds very adequately meet my needs and have turned out countless absolutely perfect bon bons. The mold surface is as smooth as glass with no manufacturing or design flaws. If maintained properly these should last me a very long time to come. Make sure you clean them by hand with hot water, no soap, and dry each cavity completely with a lint free towel, and wrap them immediately for storage to prevent contamination with dust and fingerprints.

Love this!
I love this mold! I use it to make caramel or Nutella filled chocolates. The candies pop out easily and have a beautiful shine, and the shape is really interesting. The mold cleans easily and is very durable.

This is a nice sturdy mold and exactly what I was looking for, but some might think it's a little small, so be sure to review the cavity dimensions. I measured it at 1 inch wide and 3/4 inch deep. For filling I could put in a large pea size amount.

Stampo in policarbonato
Nonostante l'abbia già usato due volte, devo dire che i risultati non sono stati molto edificanti. La prima volta non sono riuscita a toglierli e la seconda è andata un po' meglio. Evidentemente sbaglio qualcosa io nel temperaggio del cioccolato però quando uso quelli in silicone questo problema non c'è. Comunque lo stampo è solido e la forma è bella... ritenterò ancora. Comunque è un prodotto più professionale rispetto a quelli in silicone.
