Don't buy one till your almost ready to use it
We have used these for years and they work great .But I've had to throw two of these away, because I waited too long to use them. Keep it moist when mixing and keep it out of Metal Bowls .

Spice kit
We have used this before, it is not real spicy hot which I like. Works well with venison, smokes well and holds together. Will buy again.

Summer Sausage
Made delicious summer sausage! I added high temp cheddar to the jalapeno one. Everyone loved it! Hunters blend was spicy, but good.

Best summer sausage we have ever had.
I purchased this kit for my dad for Christmas- he and my fiancé are both big hunters and have gotten into making sausage together this year. I thought that adding summer sausage to their skill set might be fun. The instructions are succinct and easy to follow. We were all shocked at how big the sausage ended up being! I will say that our smoker’s “smoke” setting has a higher temp than 130. For this reason, we started the sausage on the x caliber dehydrator at the 130 mark, and then transferred to the smoker for the remainder. We also smoked to an internal temp of 160. The end product was an incredible summer sausage. Can’t wait to try more flavors!!

Wonderful flavor
Used this as my first effort at venison summer sausage. There were two packs of seasoning and cure each, so it was easy to make two batches. One each of plain and ine with jalapeño jack cheese. I let mine sit overnight in the fridge to really let the flavors bloom. I have meat lugs around for my deer processing and they came in handy to place right in the fridge. I have cure in the house and could have gone that path but was looking for an AIO kit. I'll be buying this again. These things are massive at about 3lbs a piece, so I cut them in thirds, vacuum sealed and froze them. They thaw in about 1-2 hrs this way. Now I have 2 sittings per section without worrying about eating 3lbs of it before it goes bad. I smoked mine in a pellet blend with hickory, mesquite and apple and it has a great smoke flavor in it with a little subtle apple. Delicious.

great kit - better flavor
I always have a lot of ground venison at the end of the year and like to turn it all into summer sausage. The summer sausage you get from the deer processing places, they mix your meat with everybody else - i like to eat my own hunt. Having used a few different kits, as well as my own recipes, I have found this is the best for me. You MUST used a cure and this comes with cure. Cure keeps bacteria from growing during the slow cooking process. What I like about this kit is the flavor, easy to mix, not too much garlic, not too salty, nice flavor that balances out the game. It comes with two 15lbs packs of cure/season and the casings for 30lbs of meat. You need your own sausage stuffer machine.I cold smoke first (at ~120deg) then bring the temp up to finish. The key is to NOT let the meat get above 160 (or all the juices run out). The kit has exact directions, just follow them and you are good. You do not have to smoke. Smoking adds that nice flavor, but, I also have done in just the house oven (convection oven works best), or a combo - where I cold smoke, then finish in the oven, where I can really control the exact temp. Plan on ~10 hours of total cook time. Get a good mee\at thermometer. I also sub 1/2 the water in this recipe for honey as it gives a nice flavor. (but I'm a beekeeper so I put honey in everything - that's just me)Have use with just hamburg (no extra fat), with good results. I mostly use for deer, the deer in my area is really fatty (they eat corn/apples all day) so I only add 3lbs of pork to 12lbs of meat. Again the trick is not to allow the meat to get go over 160deg - or it really dries it out.

My favorite mix
I love the flavor of this mix, as do all of the people that I share the sausage with. Sometimes I add extra jalapeno and cheese. This will always be my go to.
