Loving Just Peachy!
I love peaches, and this cookbook is right up my alley. It’s full of gorgeous pictures and tantalizing recipes. I like to consider myself a foodie. One of my greatest pleasures is to try Michelin star restaurants. Cooking is also a passion of mine, and I have a huge collection of cookbooks, but I was intrigued about a cookbook about my favorite fruit. I also was introduced to Chef Belinda from her spices at ChefBelinda.com, that I use to cook with, and after reading her cooking blogs for a few years, I was curious about her new cookbook. I wasn’t disappointed. Who knew all the things you could do with peaches? I’ve tried quite few recipes, and have been very impressed. I’m changing my gazpacho recipe to her delicate recipe that includes peaches, tomatoes, shallots, garlic, celery, lime juice and tarragon. It was fabulous and so refreshing. The crostini with, peaches, marscapone and prosciutto was a hit at a cocktail party. Then there were the scrumptious crab cakes with a jalapeño and peach -jalapeño salsa. The guests devoured them. The peach and Oreo cheesecake is heavenly. Chef Belinda shows us that there’s a lot more to do with the sumptuous fruit than cobblers and pies. Belinda Smith -Sullivan is a chef to be reckoned with. She can hold her own with the celebrity and Michelin star chefs. I can’t wait to see what cook book she comes up with next. If you enjoy cooking, do yourself a favor, and buy a copy of this charming cookbook. I’m ready for my peach and blueberry scones now.

Who doesn't love peaches???
Who doesn’t love peaches??? We live in peach country in South Carolina, where the summer peach bounty means we all gorge on this succulent fruit from the first harvest, prior to Memorial Day, to the last, around Labor Day. The timely release of Belinda Smith-Sullivan’s Just Peachy cookbook means we now have myriad recipes to try when we bring home huge baskets from the peach huts now cropping up along the highways. And even luckier for us, Chef Belinda has introduced many recipes to enjoy peaches year-round, using frozen peaches – our own and store-bought. She even uses peach preserves in her wonderful Savory Bourbon Peach Sauce for pork tenderloin! We already have several favorites from Just Peachy. The delicate Perfectly Simple Peach Iced Tea is loaded with fruity flavor but lower in caffeine than regular iced tea; the Hot Curried Peaches recipe is a divine addition to Sunday brunch; the Peach-Pistachio Chicken Salad was such a hit we prepared it twice recently (to our guests’ rave reviews); and the Peach-Jalapeno Salsa is a welcome change from tomato salsa – light and intriguing. We’ll be dipping into this beautifully done cookbook often!

Pretty on the outside, great ideas on the inside
I have long been a fan of Chef Belinda and have enjoyed success with many of her recipes in South Carolina Living magazine, some of which are go-to favorites at our house. She has a talent for creating flavor profiles, and her recipes are always easy to follow. In fact, hers is the only peach cobbler recipe I've had satisfying results with! To have a whole cookbook with her recipes is a win, because I know I will be going back to this resource often. I love that it's not just desserts--the variety of main courses, condiments, beverages and other surprising uses for peaches is amazing. I'm planning to try the Bellini Cocktail next! Plus, this book is pretty enough to leave out on display!

Awesome Book!
I love, love, love this book! It's not only beautiful....but the recipes are excellent. The information she gives on Peaches was very interesting and I actually went out and bought peaches to freeze as she said to do. Now I have wonderful South Carolina peaches to enjoy later this year. I made the Raspberry- Peach Crumble and it was sooo good. Also the Peach- Walnut Loaf Cake. Highly recommend this book and plan to buy another as a gift.Hats of to you, Miss Belinda!

This is a visually stunning and very comprehensive cookbook exclusively focused on peaches with everything you could want to know included. It is lovingly written with sweet memories of Belinda Smith-Sullivan’s Grandmother and Mom and how they influenced her love of cooking, family and peaches!I love to read cookbooks as much as I love to try the recipes. This one has great stories AND wonderful , well researched recipes. Is is quickly becoming one of my most favorite cookbooks and I have been collecting cookbooks for 50 years.

These recipes are simple and render chef-like results!
This author is very creative! To give us recipes from savory to sweet is something else!I have made the Raspberry Peach Crumble (using Chef Belinda Spices - Turkish Blend, instead of the cinnamon) and people would not stop raving over this recipe.I have tasted the Thyme-Peach Chicken Breast, Peach and Tomato Gazpacho, as well as the Oreo-Peach Cheesecake! They are all what I call “disgustingly good”!!!My next recipe will be the Salmon with Peach-Mango Sauce!
