The maximum speed output is about 25RPM.

Is there a torque curve available for this motor?

Stepper motors definitely have torque curves. They are not constant torque. Planetary drives do not lock movement, they can be backdriven. Most likely the best torque performance will be had from this motor between 0 to 300 RPM. Other 2.8A motors I have (with published torque curves) produce about 100 oz. in. at 600 RPM.

What types of voltage supplies would you apply to this motor? For example, a car battery.

24Vdc is what i would recommend to keep the current down.
