The perfect Japanese/French fusion knife. Lightweight and compact for what you need to do.
The media could not be loaded. The knife is pretty much what it’s worth. It’s an awesome French/Japanese chef knife you can have in one. It’s a workhorse knife like a normal German/French knife but has more of a harder blade to hold its edge and sharper cutting field like a Japanese chef knife. I would give this knife to anyone that is trying to move from their old chef/French knife to this knife. It gives you the opportunity to get into Japanese knives but yet keeps you in line with French knives. Perfect knife for professional and home kitchens. Blade seems like the hardness of the blade is around 59-60(HRC) so that gives you an estimate of what you want. Overall, the edges on top of the knife and corners are smidge sharp so you might want to sand that down. Other than that keeps it’s edge but you might still want that honing rod next to you.

So sharp and comfortable
I bought this as a housewarming gift. The recipient loves it! I was a little uncertain, because she had originally thought she might want a 10.5" blade, but having used this, she says it's perfect for her, and the slightly shorter length makes her feel more controlled with it. She loves how sharp it is, and how comfortable in her hand.

Sharp Strong and Sexy
2 years down the road its still as good as the day i bought it...with the exception of the fact that the logos have been rubbed off due to constant use. It sharpens well and holds its edge excellently, only thing i have to squabble about is the fact that the blade stains if u leave water on it but thats an issue thats essentially negligible.

Dull as butter knife, low quality, thin, fragile, cheap
I was looking to replace a couple of aging chef’s choice and a 33 yo Henkels chef,s knife. Read great reviews and accolades. What I got was a dull knife that could not cut through a firm tomato or handle a simple onion. My Henkles chef slid through both like a hot knife through butter. The factory edge of the MAC was dull. Making it dangerous. The finish unremarkable and did not command the $250 suggested retail on this blade. handle small, blade thin like cheap fragile stamped steel.I expected a high quality Japanese knife, factory sharp requiring little effort to cut. What I got was a cheap imitation. I cannot believe the reviews. Not recommended.Now I’m also on the hook for shipping this knife back at my expenses. I suspect that this was not the real deal or the quality standards for MAC have zero.

An outstanding knife just not for me.
Still gave this knife a 4 star review even though I ended up returning it. I found the handle just to small and just didn't feel right with my large hands. That being said the knife itself still performed as expected with a super sharp edge. It's very nice and lightweight and if I had smaller hands would have been a keeper for sure. My only complaint I'd say is that was a little surprised at edge retention .. expected it to be a little better and found myself honing it more often than I should have compared to my other Zwilling and Victorinox knives.

Great knife. Build quality is superb
Great knife. Build quality is superb. Blade arrived with a gread general purpose bevel. Ive used it daily for 6 months and have only cleaned up the blade (with the Mac ceramic steel) a few times. I also have the parring knife, both easily meet the demands of a professional. Be sure to care for it properly (cleanse immediately after use and with mild soap, dry immediately)

Very sharp and LIGHT knife!
I have bought this knife after a LOT of reading online and a lot of store shopping to try them out.This knife is very light compared to many others (esp. German ones), the blade is also narrower than them. It took a little to get used to the longer blade but once used to it, you don't want to go back to a smaller one (as long as your cutting board is large enough).I liked it so much that I bought one more for my mother and she like it better than her Victorinox. You won'T be disappointed with this knife unless you are looking for a heavier knife type.
