How do I change the saddle? The bolt is too tight. Allen key is not helping at all.

The bolt appears to be fixed in place with Locktite thread locker. You'll most likely need a drill with a 5mm Allen/ hex bit to break it loose.

What’s the routine maintenance on this? Do you need to lubricate a chain or anything?

None that I’m aware of. The drive train is enclosed so you can’t get to it.

I have read that this does not come with a rear cassette cog for gear changing. Is this correct and do i need to buy one?

You don't need to buy one. The gear shifting works internally. It's run by induction I think, not a real gear even though it feels like it. Imo this is probably the best trainer you can buy, if you're comfortable at all I think it's a great choice. The bike comes with everything you need. No additional items are needed except maybe a tablet or computer if you want to connect to something with a screen larger than your phone

Does this bike tilt based on climbing that you are riding virtually?

No, this bike does not. The Wahoo version of the smart bike does if I'm not mistaken though.
