Great knife, carbon steel needs extra maintenance, but worth it.
This knife is fantastic. For the last several years I've mostly gotten by with a wusthof classic santoku and bread knife, but while I loved the santoku I found it to be too short for some tasks, and no one makes large blade santokus from what I can tell.I decided it was time for a larger knife, and took a dive into this carbon steel knife.This thing rocks. The cuts are effortless and everything is like butter to this thing. I haven't really put it through its paces or had to correct the blade from wear yet, but it's a great knife from the cutting ability to the balance and finish.Do make sure to put a patina on it to avoid rust, unless you want to regularly oil it. It doesn't take long for water to discolor the metal otherwise.I used the mustard technique to put the patina on mine.
