Q: This will be my first Japanese knife. What equipment will I need and how best to learn to hone/sharpen it. I've had classic Wusthof until now.

Shun actually provides lifetime sharpening of its knives, which is one of the huge benefits of owning Shun. So if you have them do it, you will get the same edge that was on the knife when it was new. I have also read that if there are any issues that they notice while sharpening they just replace the knife. Honing you should do yourself though.

Q: The photo shows vg-max, are these still vg-10?

These knives should be VG-Max. Shun switched the classic line to VG-Max in 2013.Chefs Corner Store

Q: What’s the best cover/guard available for this knife ??

I use a magnetic knife holder when in the kitchen. When traveling, I use a multiple knife case. I purchased multiple blade covers for traveling to keep the edge from cutting anything (including me).

The best knife is the one you feel most comfortable using.
