Xanthan gum was a component in a gluten-free cookie recipe I made for a friend. The cookies came out delicious so this item must have helped. Even though I am not seeking gluten-free food, I would make these cookies again.

Took Our Gluten Free Biscotti from Good to WOW (Along With Cassava Flour)
We have been making our own gluten free biscotti for a few months now because it is impossible to find biscotti that is gluten free and does not have sugar cane or corn derived sugar in them. They were kind of dry and crumbly no matter what we did. Then we added a bit of cassava flour and this xanathan gum. It changed EVERYTHING. These biscotti are also good for using for paleo diet too which is a plus.WHAT IS THIS LIKE?This comes in a package which has almost two cups in it- not quite. Since it is only used a teaspoon at a time per cup of flour, this will last a while. The powder is white and the package is re-sealable.HOW DID WE USE THIS?We made our own biscotti recipe by merging some biscotti recipes and then incorporating King Arthur Gluten Free Baking Mix (no rising agent) into it instead of flour, and making part of the substitution almond flour too. They were just a bit too crumbly although good.WHAT CHANGES DID WE MAKE?We added a cup of cassava flour and 2 teaspoons of this xanathan gum to the recipe and although at first the dough seemed REALLY sticky and almost gooey, it is amazing how the biscotti turned out. PERFECT. The consistency is absolutely perfect. They are dry, yet stay together and are lightweight as well.THE BOTTOM LINEFor our biscotti recipe this has been a complete game changer. It took away the crumbly nature of the biscotti and turned it into a more typical texture of biscotti, keeping it tender enough to chew, but dry enough to dunk WITHOUT FALLING APART!MY RATINGFIVE STARS. This will stay in our cupboard from now on. We might reduce the cassava flour, but this xanathan gum is going to stay about the same. It is fabulous for gluten free diet or paleo recipes.

Not a one to one substitute for cornstarch
I’ve used this product in the past and have had some success with it. And a couple yeah that didn’t work! Unfortunately the package wasn’t sealed and a large amount of the product was in the shipping box. So this particular experience wasn’t positive.

Excellent for more than gluten free use
I started using xanthan gum and gar gum when I went gluten-free about 18 years ago.I have found a few other uses that make using it spectacular.For one: I have made my own salad dressings for about 10 years now because I can have all the flavor from dressing my salads and vegetables, but without the calories from so much oil. Fill the blender with about 3/4 cup of water and 1/2 teaspoon of xanthan gum. Blend. Now, add your vinegar, spices, mustard, whatever and blend again. If you let it sit for about an hour in the fridge, you will have a delicious, thick and creamy dressing for a small fraction of the calories of store bought dressings.Honey and Orange Salad DressingI made this to go over a scallop salad. It was so tasty, it quickly became one of my favorites for lots of salads.• 1/2 cup fresh orange juice – 61 calories• 1/2 cup water• 2 tablespoons honey – 120 calories• 1 tablespoon Dijon mustard – 10 calories• 2 tablespoons olive or canola oil (walnut or almond oil would also be good) – 240 calories• 1 tablespoon gluten-free, low sodium Tamari sauce (or soy sauce) – 10 calories• salt and pepper, to taste• 1/2 teaspoon xanthan gum – 5 caloriesPut all ingredients in blender and blend until smooth.Recipe as directed: 436 calories – 27 calories per tablespoonWant to make homemade ice cream that you can scoop out and does not freeze solid like a block of ice? Add about a teaspoon to one cup of the liquid in your recipe, then blend. Now, finish your recipe.This is a great product.
