I was very hesitant to buy an expensive knife for my (smoking) cooking habit/hobby. This thing has been a dream except for learning how to use a whetstone sharpening stones that has been quite the journey. I digress this knife has been amazing cutting brisket, beef ribs, pork ribs, and chicken with no issues. It made me want to cut other objects like rope etc. Ha, trust me I didn't though, use the right tool for the right job. This knife saved me from spending an exorbitant amount money for a Damascus steel knife which I believe are way over priced IMHO. Dalstrong has other lines that have made me lean into getting more of their other lines, which yes they do have Damascus knifes which are cheaper than some of the other brands out their.Dalstrong's lifetime warranty was another deciding factor, that doesn't mean take the knife and drive it into a wall which would be considered abuse. But if my knife was to crack at the handle or blade, it would be covered (normal usage conditions). Not too many other knife manufacturer's out there would offer this type or warranty unless you paid with your left kidney and first born just to buy a knife. If you purchase this knife trust me you will not be sorry, I even talked my family and friends into getting these knifes and they are so happy with the quality and its ability to maintain an edge for so long with moderate to heavy usage.

Purchased this knife because I had heard really good things about the Dalstrong products. I was not disappointed. I am not a professional chef, but I love to cook. I have been using JA Henkle and Cutco for years. This is the best filet/trimming knife i have used. I was a little worried about the handle shape, but it feels really nice and secure when you are using it. Super sharp right out of the box. I have used it to trim beef brisket, pork ribs, fillet trout and salmon. I am so happy with this knife I am going to purchase the 8 inch chef knife. I highly recommend purchasing this knife. Plus it looks amazing.

YES, THE PRICE MAY SEEM A BIT STEEP, BUT I PROMISE YOU YOU GET WHAT YOU PAY FOR. THIS IS A FANTASTIC FILLET KNIFE. WE USED IT TO CUT AND QUARTER A FRESH BUCK AND IT WAS JUST WHAT WE NEEDED.BOTTOM LINE--JUST DO IT. YOU WILL NOT BE DISAPPOINTED.

I’m a knife guy. Love a sharp knife. Start with a stone, go to a steel and finish with razor strip. This is an Amazing knife. Super sharp, holds an edge, EASY to keep sharp, very comfortable handle. I actually bought this knife the clean deer. I own several Dalstrong knives,Each and everyone is amazing. Really good knife makers. My only wish is that it came with a sheath. It has one sort of, But not a very good one

This brand has become my favorite knife brand. This is my 3rd knife from them and this series. They are super sharp and work really well. Highly recommend them.

Pretty good knife, got it for work. My experience has been eh with it. Lost it's edge pretty quickly and a little bit more flexible than I anticipated, with that being said, it makes up it's flexibility with the versatility I got when having to curve around certain cuts. User's preference is all it is, overall pretty good knife.

Worked in kitchens for 25+ years and was executive chef for 11 of them. I know the value of good knives... This is a solid knife. Was sceptical about the handle and weight but it has nice balence and the handle is comfortable. I do prefer a straight blade as compared to the scimitar style but the curviture isn't as pronounced as others I've used. Solid blade not flex steele... And frigging attractive... Haven't done any heavy lifting with it yet so I may have more to say, but as for now.. Well worth it.

Amazing boning knife. Flexi blade, wonderfully shape. Easy to hold feels very natural, husband is unbelievably happy with it. As a butcher he’s used a lot of different brands and he insisted this one of the best.To the guy who said it was great for carving thank you for trying to answer my question I don’t think you quite understood what I was asking but I appreciate the enthusiasm

The knife itself is working perfectly for me and really my only issue is the sheath that comes with it: the knife can slide off it quite easily and the last time it did, the blade cut through the bag I was carrying the knife in. So I'd recommend keeping this knife in a proper knife bag roll.

Bought this for my semi-retired dad, who knows his way around the kitchen and is incredibly hard to buy for. He’s a fantastic meat-cooker (I’d say fantastic chef, except my mom does the rest of the cooking haha)... loves to BBQ and is picky about the tools he uses. The box it comes in is very luxurious, and the knife itself looks like it’s worth double what it costs.Very happy with this purchase!

I brought this knife to get more productive at work (butcher) and I was right whit this knife. I know not a cheap knife but pay off the and off the day.

Surprisingly comfortable in the hand. I'll have to catch a couple fish to see how well it works. The edge doesn't look sharp but it is.
