Super flavorful, salty, spicy, with a kick of early fermentation. It's the kind of kimchi that'll make your mouth water as you're eating it. In my bag, there was a generous amount of the crispy/crunchy white base of the cabbage, which is the best part of kimchi. (Yes, there was plenty of the leafy parts too, if you're a degenerate who likes the soggy bits).The kimchi also came with a little pamphlet that explains how the fermentation process affects the flavor. Update: It has been a couple weeks of being in my fridge, and that seems to have done the trick. I think they should just sell it after it is the right age. It now tastes exactly as it should! It has nostalgic value:) It is clearly a very quality product. I do recommend it with the caveat that you wait a few weeks to eat it.I lived in Korea for a couple years when I was in the Army and got a taste for this stuff. The first time I tried it, I hated it, but after a year or so I seemed to start to crave it…lol! I know what it is supposed to taste like because it is free when you order any meal in Korea if you ask for it (so I ate a lot of it). There is a flavor that I can’t place, but it isn’t right. It isn’t bad…just not right. I will try another brand.

My daughter has become obsessed with kimchi but we live in Alaska so finding good fresh kimchi is harder then it sounds so i have been looking all over for some that is not canned and i came across Mama Kim's and decided to give it a try. BEST decision ever!!! It came packaged with so much care it had 5 ice packs than wrapped in a insulated bubble package than wrapped in thick thick paper all to keep it fresh, when i finally got through all the well thought out insulation i was not at all disappointed with the size of the bag it was just as pictured and you could feel some that it was still a fresh and crunchy i was very impressed and my daughter was very excited. When she ate some she had this huge grin on her face and just kept eating it trying to get it back was like pulling meat from a tiger lol. It was absolutely worth it!!!

This is truly fabulous kimchi. I like the "FRESH". They have "Fresh" and "Fermented" on their personal website -- so be sure you know which one you like and pick appropriately. The FRESH has more crunch and takes longer to age. They packaged it VERY WELL. It comes inside a very thick silver bubble wrap with icepacks and its inside a thick plastic bag and then the actual bags that contain the kimchi are sealed. I recently had one batch that stayed at the post office a little too long because of the Juneteenth holiday and my package looked like a basketball when it arrived. Even though everything had expanded, Nothing Leaked. But the kind seller offered to ship me more because it had surpassed its edible quality because of the shipping. They are hands down the best in flavor and quality for kimchi. And they are truly professional with their business. I give Mama Kim's a very high recommend.

this is a second time I order. first time it was very fresh, crunchy and have good taste. that why I order again, I received it today and was disappointed after I open the pouch kimchi look bad, cabbage was soggy and doesn't look good also tasted terrible. I will throw it away and never order again.

The cabbage was crunchy not overly hot nicely spiced also not salty. I will purchase it again yummy!!

I had purchase this for my work and it worked out great. Be aware of the smell of fermenting kimchi! Thankfully, my coworkers all eat kimchi so it made them hungry everytime I opened the pack to get some portion out of it. It took about 2 weeks to fully get fermented in the refrigerator and it tasted great! I love eating ramyun with ripened kimchi! If you are looking for an original tasting kimchi, look no further. Good portion for the money as well. You won't regret it if you love kimchi. Tip: Once ripened, left overs are good for some kimchi soup with tofu. You will be amazed at how good it brings out the entire flavor of the soup!
