The straight-edged paring knife in this set was voted best paring knife by Cook's Illustrated. I was used to a little "beefier" paring knife when one of these Victorianox babies was given to me, and it took a little practice to get used to it. The textured handle assures a good grip on the knife, even with wet hands and is large enough for a medium-sized man's hand. It doesn't matter how sharp a knife is when the package arrives, but how the blade *maintains* its sharpness. These have excellent edge retention, though like all blades, should be run along a sharpening steel or through a "V" sharpener before (or after) each use to maintain their edge. As for dishwasher safe, I'd never recommend putting a knife through the dishwasher. Granted, the handle on these will probably handle the top shelf cycle, but do yourself and the knife a favor and hand wash only.

Love these little knives. This is the second time I've ordered the set as I must be misplacing the knives. They're all quite handy, lightweight, feel good in the hand and are sharp. Excellent set.

These knives are comfortable to hold, we’ll manufactured by a well known company. We haven’t had them long enough to rate their ability to hold a sharp edge. For the price they are worth it.
