Q: 50% fruit? Why lemon juice when rhubarb is so naturally tart? Pectin is great. Cane sugar too, but less would be nice. Love lemon but why here?

The lemon juice just brightens the flavor. This jam is utterly delicious!! Once rhubarb jam is made with all the sugar, that small bit of tart acid evens the flavors out. You won't regret it.

Q: I would like to order, but concerned about how it is shipped, since so many reviews say the jars were opened when recieved.

I did not noticed the 10 pack label, but when I bought it, they only send me one jar. The price for 10 jars would be unbelievable. It is only one jar.
