Mild Hot is the way to go.
As someone mentioned, the extra hot is insanely hot. Mild Hot is perfect and awesome. I use two packages, 1lb of ground pork and 1lb of tofu.

Extra hot -- TOO HOT TO EAT
Yo, I LIKE HOT FOOD. I got "Extra Hot" because I LIKE HOT FOOD. This is pure capsaicin rage. I ate a few bites, but had to stop. I couldn't even save the meal, and I hate wasting food. Unless you have already burned your tongue and alimentary canal to the point of being completely insensitive to all sensation, do yourself a favor and get the mild. R.I.P. my butt tomorrow.
