Can this stick tonroof shingles? basically roof shingle and then aluminum solar stand

Probably, this stuff, once it cures is Damn Strong!! Once cured , it’s like rubber and almost impossible to remove.

how strong will Aluminum stick to sheet metal? How hard to remove after 2 years baking in hot sun?

It will be very hard to remove. In my experience, this is will bond permanently if applied correctly prepped surfaces. If it is something you will want remove after a period of time, regular silicone may be an alternative.
