I have the Santoku knife and am wondering why the flutes are on the left hand side of the knife, the slices adhere to the blade.

My understanding is that they are there to limit food slinging to the blade.

Is a left handed knife?

Universal handle. I am left handed and have no issues. My wife is right handed and also uses it daily. It comes razor sharp. Use a sharpening steel 3-4 strokes alternating each side daily, do not cut on glass plates and it will stay sharp. Bets paring knife we have owned.

what material is the handle made of?

I believe the handle is made of hard plastic, with stainless steel on either end and the posts holding the assembly together. I find it very easy to use. It has become my go-to knife for most food prep.
